Grilled Zucchini Roulade

You will need:

1 recipe prepared goat cheese filling

2-3 large whole green zucchini – ends removed – thinly sliced length-wise on a mandolin


For the goat cheese filling:

½ cup soft goat cheese, at room temperature

2 Tbsp heavy cream

1 lemon, zested

¼ tsp each salt and pepper

1 Tbsp chopped fresh herbs (I used a combination of chopped thyme and Italian parsley, but basil, chives, etc. would also work)



For the filling – combine all ingredients in the bowl of stand mixer or bowl with electric beaters and whip until light and fluffy. Store in an airtight container for 3-4 days.


For the roulades:


    Preheat outdoor grill or grill pan over medium-high heat

  2. Place raw zucchini slices on the grill, crosswise from the grates, and allow to cook for 1 minute per side, removing once they have some color – remove to a plate or sheet tray and allow to cool completely (no salt, pepper or oil on the zucchini or it will soften)

  3. Once cool, spread a small spoonful of the prepare goat cheese mixture on each strip of zucchini and roll up length-wise

  4. Serve immediately
